Quick'n Easy Berry Cobbler

This recipe is simple yet the perfect dessert for a cold winter day or anytime an easy and delicious treat is on the menu. Serve it just as it is hot out of the oven or with whipped cream, or even your favorite vanilla ice cream. Yummy!

Quick'n Easy Berry Cobbler

INGREDIENTS

  • ½ stick butter (4 tablespoons)

  • 1 cup sugar

  • 1½ cups WhiteLily flour or all-purpose flour

  • 2 teaspoons baking powder

  • pinch of baking soda

  • ¾ cup heavy cream

  • 2 heaping tablespoons sour cream, full fat

  • 1 egg

  • 2 cups fresh berries

  • 1 teaspoon vanilla extract

  • salt to taste

INSTRUCTIONS

  1. Add butter to a 9-inch round or square baking pan and place the pan in the oven.

  2. Preheat oven to 3:50 degrees. Leave baking pan in the oven until the butter has melted.

  3. While the butter is melting, mix together all the dry ingredients.

  4. To the dry flour mixture, add heavy cream, egg, sour cream, and vanilla. Stir well with a fork or whisk until batter is smooth and well combined.

  5. Slowly drizzle batter into the hot melted butter in the baking pan, taking care to keep the melted butter has evenly distributed as possible. Do not stir.

  6. Add berries over the top as evenly as possible. Do not stir

  7. Bake at 350 F, 40 minutes. If the cobbler is becoming too dark, place a sheet of tin foil (or some other type of cover) over the top.

  8. Serve warm or cold.
