Dump & Bake Rice Pudding

This simple and delicious rice pudding recipe is easy on the cook because it calls for uncooked rice. Just dump everything in, stir occasionally and let the oven do the rest. And it is always a smart dessert to serve a crowd because

it is a treat that is enjoyed by practically everyone, is easy to put together, can be prepared in large quantities, and does

best when slow baked in the oven at a low temperature for several hours, giving the busy hostess free-hands to complete

other important tasks.

To create 'The Perfect Top' as pictured, in the last 30 minutes of baking sprinkle the top evenly with a few tablespoons of granulated white sugar. Then place the rice pudding back in the oven uncovered, allowing the heat of the oven to slowly caramelize the sprinkled sugar giving the rice pudding a delicate golden crust.

Dump & Bake Rice Pudding

Ingredients:

  • 6 eggs

  • 5 cups milk

  • 1¼ cup sugar

  • 3 tablespoons sugar (to sprinkle the top in the last 30 minutes of baking)

  • 1-2 teaspoons vanilla

  • 1 teaspoon salt

  • 1 cup uncooked rice

  • 1 cup light raisins, optional


Method:

  1. Preheat oven to 350 degrees F. Butter the sides and bottom of a 2-3 quart casserole dish, set aside.

  2. Add eggs to a medium sized bowl, beat with a fork or hand mixer until well combined.

  3. Add milk, sugar, vanilla and salt, beat well until everything is well combined.

  4. Add rice and raisins (if using) stir to combine.

  5. Set a large pan of water in the oven. Set the casserole dish inside the water.

  6. Pour the pudding inside the casserole dish. Taking care to evenly distribute the rice.

  7. Bake, covered, stirring well every 15 minutes for the first hour. After 60 minutes of baking remove the lid and set it aside.

  8. Sprinkle the top of the pudding evenly with a few tablespoons of granulated white sugar. Once the pudding is evenly layered with granulated sugar, place the baking dish back in the oven uncovered. The heat of the oven will carmelize the layer of sugar and give the rice pudding a delicate golden crust.

  9. Rice pudding is done when the rice is tender and the pudding is thick and creamy. When done, the rice pudding can remain in the oven, covered, with the oven off, or the casserole dish can be set outside the oven, covered, until it cools enough to serve.
