Muffins that taste like donuts, everyone loves these with or without the topping. They are surprisingly moist on the inside and firm on the outside. Those who love donuts but opt not to eat fried foods, you are in luck... very delicious little treats. And worth giving them a try, who knows... you just might fall in love!
Baked Donut Muffins
Ingredients:
2 eggs
1 cup sugar
1 cup milk
5 tablespoons butter, melted
1 teaspoon vanilla
4 cups all-purpose flour (fluffed or sifted before measuring)
4 teaspoon baking powder
1/2 teaspoon salt
Cinnamon Sugar Coating:
1 stick unsalted melted butter, for rolling
1 cup sugar
1 tsp cinnamon
Method:
In large bowl, beat the eggs until foamy.
Gradually add the sugar, beating it continuously.
Stir in the milk, vanilla and the 5 tablespoons of melted butter.
In separate bowl, sift together the flour, baking powder and salt.
Add the dry ingredients into the wet ingredients mixing well.
Cover and chill the dough for 30 minutes to 1 hour for easy handling.
Preheat oven to 450°.
Spray a baking sheet with non-stick cooking spray.
On a lightly floured surface, roll the dough out to a 1/2″ thickness.
Cut with a doughnut cutter.
Place the doughnuts (and holes) on the baking sheet about 1″ apart.
Bake 10-15 minutes or until golden brown.
Brush each doughnut and hole with melted butter and roll in cinnamon sugar to coat either lightly on the top or heavily on all sides, as desired.
