Make a Perfect Pie Crust With These Time Tested Tips

The baking of pies is sometimes referred to as one of the most difficult procedures in cooking. Use the tips below to make sure your pie crusts are perfect for any occasion. |

Coconut Crust: Combine 1 package (7 oz.) shredded coconut and 6 Tbs. melted butter or margarine, mixing well. Press evenly on bottom and sides of buttered 9-inch pie pan. Bake at 300 degrees for 25 to 35 minutes or until golden. Cool before filling. Beat together 2 egg whites and 1/4 tsp. salt until frothy. Add 1/8 tsp. cream of tartar. Beat egg whites until stiff. Gradually add 1 tsp. vanilla extract and 6 Tbs. sugar, beating until stiff peaks form. Line greased and floured 9-inch pan with meringue. Bake at 275 degrees for 45 minutes. Cool before filling. Sift together 1/2 cup EACH whole wheat flour and all-purpose flour. Stir in 3 Tbs. grated Cheddar cheese and 1/4 tsp. salt. Cut in 1/3 cup vegetable shortening until it resembles small peas. Sprinkle in 2 to 3 Tbs. cold water., 1 Tbs. at a time, mixing dough with a fork until it holds together. Form into a ball. Roll to fit a 9-inch pie plate. Trim and flute.

Basic Pie Crust: Sift 1 1/2 cups all-purpose flour and 1/2 tsp. salt together. Cut in 1/2 cup shortening with fork or pastry blender until pieces are the size of small peas. Divide mixture into quarters. Sprinkle each quarter with 1-2 Tbs. water and gently toss with fork; push to side of bowl. Repeat until all four quarters are moistened. Form into a ball. Flatten on lightly floured surface by pressing with edge of hand. Roll from center to edge until 1/8 inch thick. |
