  FUN & FANCY

          GOURMET TRUFFLE SUPREME

                     This rich, decadent, easy to prepare, dessert is a

                       truly unforgettable gourmet treat that must be

                            made at least one day before serving.

                 Ingredients:

                    3 - 16 ounce bags of semi or bittersweet chocolate chips

                    1 - 16 ounce bag of white chocolate chips

                    4 cups heavy whipping cream

                    1 - 3 teaspoons Grand Marnier, Kahlua, Brandy, Whiskey or any

                    Other liquor as a complement to the delicate chocolate truffle

                    flavor. (optional)

                    1 medium box of Lemon Instant Pudding Mix (unprepared)

                    1 - 20 ounce can of pineapple chunks packed in juice

                    1 jar of apricot glaze or jelly

   Method:

    1.  In a small saucepan bring 1 cup of heavy whipping cream just to a full

    boil. Stir constantly taking care that the delicate cream does not burn.

    2.  Remove from heat and immediately pour over 16 ounces of small

    chocolate bits.

    3.  Wait one minute before whisking vigorously until smooth.

    4.  Pour into a greased pan and refrigerate for a minimum of two hours.

    5.  After refrigerating the first layer until very firm, repeat steps 1 - 3  for

    the second layer.

    6.  While smoothed chocolate is still in the mixing bowl stir in one 12 ounce

    tub of thawed cool whip.

    7.  Pour this mixture over second layer and allow to harden in refrigerator

    for at least 3 hours, overnight is best.

    8.  For the third layer repeat steps 1 - 3  but this time, according to your

    preference, add the liqueur (optional).

    9.  Pour over the second layer of firm cold truffle chocolate. Allow to chill

    and harden in the refrigerator at least 2 full hours. Longer is best.

    10. For the fourth layer repeat steps 1 - 3 except this time use white

    chocolate chips instead of dark.

    11. Once the entire truffle is completely chilled and very firm to the touch,

     mix together the Lemon Instant Pudding powder and the juice from the can

     of pineapple.

    12. Once this mixture has formed a smooth, thick glaze, immediately pour

    this over the entire top of the hardened truffle, and immediately put this

    back in the refrigerator to chill.

    13. May be garnished with cleaned and towel dried fruit dipped in apricot

    jelly or glaze, to seal and coat the fruit before arranging on finished truffle.

    14. Keep chilled until ready to serve.
