BLUEBERRY PIE FILLING There is nothing quite like the filling of a blueberry pie. Try this quick-n-easy time-honored recipe for a tasty ole fashioned treat. Ingredients: 4 cups fresh or frozen blueberries 1/2 teaspoon salt 2 cups white sugar 6 cups water 6 tablespoons cornstarch 2 tablespoon butter 3 tablespoon lemon juice Method: 1. In a saucepan, combine 4 cups fresh or frozen blueberries, water, 1/4 teaspoon salt and 2 cups sugar. Bring to a boil and continue to boil for 5 minutes or until thick and clear. Add cornstarch, a little at a time. Cook until thickened. Add butter and lemon. 4. Pour filling in unbaked pie shell and bake in preheated 375 degree oven for 20 minutes, allow to cool. |
