                        BLUEBERRIES AND

           CAKE MIX ICE CREAM

                  This wacky recipe is easy and absolutely delicious.

                  If you love Cold Stone ice cream but hate the price,

                     this recipe is for you. Not only is this ice just as

                       delicious, but it's also super simple to make!

                 Ingredients:

                    1  cup whole milk, well chilled

                    3/4  cup granulated sugar

                    2  cups heavy cream, well chilled

                    1  teaspoon pure vanilla extract

                    2/3  cup cake mix (any flavor)

                    4 cups fresh blueberries

                    1 small jar apricot jelly

   Method:

    1.  Place freezer bowl of ice cream maker into the freezer.

    2.  In a medium bowl, whisk the milk and granulated sugar until the sugar

     is melted.

   

    3.  Stir in the heavy cream and vanilla to taste.

    4.  Beat in cake mix with an electric mixer approximately 1 minute.

    5.  Pour mixture into the freezer bowl and let mix until it has thickened

    (about 25-30 minutes).

    6.  Remove ice cream from freezer bowl and place into a separate airtight

     container.

    7.  Place airtight container of ice cream into the freezer to store and harden.

    8.  To serve, seal and shine blueberries by glazing them with warm apricot

    jelly. Place blueberries on top of frozen ice cream and serve.

    NOTE: No an ice cream maker? Make this recipe by placing prepared

    mixture in freezer and stirring well every 45 minutes until ice cream is the

    consistency of soft serve. When soft serve consistency has been

    achieved, place in airtight container to harden and store.
