In spite of the age old controversy, coffee is, in fact, an excellent source of disease-fighting antioxidants; and, taken in moderation, coffee is a safe beverage that can actually offer positive health benefits.

Caffeine works as a mild central-nervous-system stimulant, and is one of the world's most widely used drugs along with being an intrinsic part of the human diet for centuries. The key, as with many other things, is moderation as scientists have found that drinking large amounts of caffeine over a short period has been shown to create a significant rise in blood sugar. Another issue worth noting relates to pregnancy, as pregnant women should avoid coffee, eliminating it from their diets completely, in fact, many coffee loving females actually detest the taste, and even the smell, of coffee during their pregnancies. Nursing mothers as well should restrict their daily intake of coffee to less than three cups or, if possible, remove it from their diets entirely, only to resume consumption after nursing has ended.

BLUEBERRY CHUTNEY This fabulous recipe is perfect as a sandwich spread (especially with ham), and is also delicious served over cream cheese or softened Brie or Camembert cheese as an appetizer. Ingredients: 2 cups fresh or frozen blueberries 1/2 cup minced onion 1 Tbsp. grated fresh ginger root 1/3 cup apple cider vinegar 1/2 cup brown sugar 1/2 cup dried blueberries 2 Tbsp. cornstarch 1 cinnamon stick dash salt Method: 1. Combine all ingredients in medium saucepan, then bring to boil over medium heat, stirring frequently. Boil 1 minute and remove cinnamon 2. Cool completely, place in tightly sealed containers, and refrigerate for up to 2 weeks.
NOTE: This recipe freezes well.
