             QUICK & EASY POLYNESIAN

                                      CHICKEN

                                                 

                        This delightfully different recipes is unique and

                         tasty, especially over rice.. Surprise yourself.

                 Ingredients:

                    6 chicken thighs or breasts

                    1 (15.25 ounce) can fruit cocktail

                    1 (15.25 ounce) can chopped pineapple

                    1/2 cup light or dark brown sugar

                          Apricots, fresh or canned (optional)

                     Lightly sprinkle with cinnamon (optional)

   Method:

    1.  Preheat oven to 350 degrees F (175 degrees C).

    2.  Rinse and pat dry the chicken pieces. If you wish, remove the

    skins (not mandatory). Place chicken in a 9x13 inch baking dish.

    3.  Pour the entire can of fruit cocktail and chopped pineapples evenly

    over the chicken.

    4.  Finish by evenly distributing the brown sugar over the top of the

    fruit and chicken mixture, and bake in the preheated oven for 1 hour,

    30 minutes (no turning or basting required). Let cool and serve.

    * Delicious served over a bed of white rice.
